Elbow Macaroni Salad

 
Ingredients -
1 (16 ounces) package Elbow Macaroni
1 cup Sour Cream
1/2 cup Mayonnaise
1/2 cup Fresh Parsley, chopped
1 tablespoon Lemon Juice, freshly squeezed
1/2 teaspoon Sea Salt
1/2 teaspoon Fresh Ground Black Pepper
1/2 cup Green Onion, chopped, green and white
1 cup Cucumber, diced 1/2 -inch
1 cup Broccoli Florets, thawed
1/4 cup Carrot, diced
 
Preparation:

1. Boil the pasta until al dente.

2. Combine the salt, pepper, lemon juice, parsley, mayo and sour cream.

3. Combine the mixture with the vegetables.

4. Add the pasta.

5. Toss gently with the other ingredients until well coated.

6. Refrigerate at least 1 hour prior to serving.
