Macaroni Salad with Sour Cream

 
Ingredients -
1 pound Uncooked Elbow Macaroni, cooked, drained, and cooled
3/4 cup Sweet Pickle Relish
1 can (4 ounces) chopped Pimiento
1/2 cup diced Green Bell Pepper
1 tablespoon chopped Fresh Parsley
2 teaspoons grated White or Yellow Onion
1-1/2 teaspoons Coarse Salt, or to taste
1-1/2 cups Real Mayonnaise, divided
1/2 cup Sour Cream
1/2 cup Whole Milk, divided
Fresh Mixed Salad Greens
 
Preparation:

1. Combine the sour cream, ¼ cup milk, relish, green pepper, pimiento, onion, parsley, salt, 1 cup mayonnaise and sour cream.

2. Blend well.

3. Add macaroni.

4. Toss.

5. Refrigerated covered several hours or overnight.

6. Combine the remaining 1/2 cup mayonnaise with the remaining 1/4 cup milk.

7. Stir into the salad until it is moistened as desired.

8. Place macaroni salad in a serving bowl and garnish with greens.
