Salmon Macaroni Salad with Shallots and Dill

Ingredients -
1/2 pound (about 2 cups) Macaroni Pasta
Sea Salt

2 (7 ounces each) cans Red Salmon
1/2 cup Real Mayonnaise (plus more to taste or for added smoothness)
1 teaspoon Dijon Mustard
1 teaspoon Lemon Zest
1 tablespoon Lemon Juice
1/3 cup chopped Shallots, Red Onions or Green Onions
2 tablespoons chopped Fresh Parsley
1 tablespoon chopped Fresh Dill or 1/2 teaspoon Dried Dill
2 Celery Stalks, chopped
Tabasco, to taste
Fresh Ground Black Pepper
Preparation:

1. Bring a 1 gallon pot of water to a boil.

2. Add 2 teaspoons of kosher salt.

3. Add the dry macaroni pasta and cook, uncovered, in a rolling boil for about 10 minutes, or until the macaroni is al dente.

4. Remove from the heat, drain, and rinse it briefly in cold water.

5. In a large bowl mixing bowl, add the salmon, mayonnaise, mustard, lemon zest and lemon juice.

6. Mix in the shallots, parsley, dill and celery.

7. Mix in the cooked macaroni while it is still warm.

8. Add in the Tabasco and freshly ground pepper to taste.

9. Adjust the seasonings.

10. Chill before serving.
